Hello everyone,
In Malta there is a first name 'Karistu', which I've been told is short for Eucharistio or something along those lines. However, in baptismal and marriage records no such name exists....
I wondering what the proper form of 'Karistu' is.

Yes, Eucharistio is correct. Or Eucaristico. No idea why it doesn’t appear much in the records but it’s probably a name used mainly in a town in Gozo? Could it be like Coronato in Nadur? Very rare in any case.
